IT’S women’s month and one thing I’ve noticed among us women is that we don’t have time.
Between taking care of our households, spouses or partners, having a job, looking after children and having a social life, there’s very little time to do anything else.
After taking care of all of these aspects, a woman still has to make sure the family is well fed and that is another big job on its own.
Nutrition plays a vital role in our well-being because food intake determines how we look, feel, and believe it or not, it also determines how our minds work.
At the end of the day, balancing every aspect of our lives can become such a mission.
Knowing all of this makes the job of a recipe developer very interesting and challenging at the same time because we have to take all these things into consideration and make life easy for the woman or man responsible for making the food at home.
This week’s recipe is very easy to prepare, yet tasty, filling and not bad on the nutritional benefit front.
Pork bangers can be omitted for a vegetarian option, the dish still remains tasty even after they are taken out.
The addition of mango balances out the savoury flavours from the dish. The salad can be served with roasted vegetables and meat.

PORK BANGER AND MANGO COUSCOUS SALAD
Serves: 6
250ml (1cup) hot water
1 chicken stock cube
250ml (1cup) couscous, medium precooked
15ml (1tbs) olive oil
1 cocktail onion, cut into thin strips
1 clove of garlic, finely chopped
½ red pepper, chopped
½ green pepper, chopped
2 pork bangers, fried or grilled and sliced diagonally
1 mango, cut into cubes
1 sprig of thyme, chopped
Method:
Add water into a medium bowl and dissolve the stock cube.
Add the couscous to the stock water. Fluff with a fork until the water is completely dissolved. Set aside.
In a saucepan, heat oil and sauté onion, garlic and peppers until the onion looks translucent.
Add the cooked vegetables, pork bangers and mango to the fluffed couscous.
Sprinkle with thyme. Serve.
